Pumpkin Mmmmuffins

I originally posted this recipe 3 years ago!!  I’m not much of a pumpkin spice coffee lover (am I the only one??), but I do love these muffins.  Try the recipe, you might like them, too!

Although I don’t have them often, the pumpkin chocolate chip muffin is one of my favourite treats. There is a little bagel shop nearby that makes and serves them fresh everyday. They are moist, delicious, and quite large – almost a meal in themselves!

When on maternity leave, I would aimlessly push my stroller through the neighbourhood desperate for my child to sleep. My walks would usually take me by this bagel shop, and I would always stop in to grab a muffin and coffee.

Fast forward a few years, I realized I could try and make these muffins myself. A little search online lead me to this recipe. They are less than half the size of my bagel shop muffins, but they were moist and delicious. My family loved them.

Here is the recipe Pumpkin Chocolate Chip Muffins from allrecipes.com:

Ingredients:
3/4 cup white sugar
1/4 cup vegetable oil
2 eggs
3/4 cup canned pumpkin ** I used the whole can
1/4 cup water
1 1/2 cups all-purpose flour
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon ground cloves
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1/2 cup semisweet chocolate chips

Directions:

Preheat the oven to 400 degrees F (200 degrees C).

Grease and flour muffin pan or use paper liners.

Mix sugar, oil, eggs. Add pumpkin and water. In separate bowl mix together the baking flour, baking soda, baking powder, spices and salt.. Add wet mixture and stir in chocolate chips.

Fill muffin cups 2/3 full with batter. Bake in preheated oven for 20 to 25 minutes.

Boo!

I might not have mentioned this before, but I really really like my son’s teacher.  He happened to have her last year as well (split class), and we feel lucky to have her again this year.   She gets his smart, fidgety, funny self and for that reason, I like her 🙂

Last Friday as I dropped him off, she came rushing towards me with a giant, ok large pumpkin in her hands.  Can you, would you…?   Take home this guy and carve him for the class ?   Well, of course we (the royal we) would love to.  Knowing all along that it would be my husband doing the carving with my son wielding his own knife somewhere in the process.

My son’s eyes were wide and he had a big smile.  He was thrilled.

The only stipulation was that it had to be back on Monday as there was going to be some type of competition between all the classes.  No problem, I responded.

Well, last night at 6pm, we (the royal we) are carving the pumpkin.  We wanted something scary, but not too scary.  Happy, but not too happy.  After a little research, my son and husband exactly what they were looking for.

So, how did ours turn out?

Pretty good, I think.  My son was thrilled to have his Dad take the pumpkin to class this morning.

And that is a great way to start a Monday!
